With experience working at prestigious hotels like Grand Hyatt Doha, Grand Hyatt Kuala Lumpur, and Hyatt Regency Kathmandu, Shyam has honed his skills and developed a deep appreciation for diverse cuisines. He is currently working at the Grand Hyatt Jakarta, where he continues to perfect his craft and share his love for cooking.

Shyam's cooking philosophy is simple – his recipes are no secret, but if they inspire or help others, he considers it the greatest reward. His work is dedicated to guiding others in the kitchen with step-by-step recipes that bring joy and flavor to every meal. For him, the greatest payment is the Duas (blessings) from those he inspires.

Uttam Thapaliya is an accomplished Sous Chef at Hilton Hotel Kathmandu, bringing extensive culinary expertise from his diverse experience in prestigious international hotels. Prior to his current role, Uttam served as Sous Chef at Hyatt Centric Soalteemode Kathmandu and held the position of Junior Sous Chef at Jumeirah Emirates Towers. His earlier career also includes working as Chef de Partie at Jumeirah at Saadiyat Island Resort, where he honed his skills and contributed to world-class dining experiences.

With a passion for culinary excellence and a strong foundation in high-end hospitality, Uttam continues to make a significant impact in the culinary world. His dedication to the craft and attention to detail have made him a respected leader in the kitchen.

Michele Garbuio is a seasoned hospitality professional with a global career spanning multiple countries. Currently serving as the Resident Manager at Portrait Milano, part of the Lungarno Collection, Michele brings extensive experience in luxury hotel management to his role. His career journey has taken him from managing prestigious properties worldwide to leading food and beverage operations at top-tier establishments, including Four Seasons Hotels and Resorts and Jumeirah at Etihad Towers.

With a passion for wine and world travel, Michele has lived and worked in several countries, including Italy, the UAE, Egypt, the UK, and the US. His expertise in food and beverage management is complemented by his strategic leadership in pre-opening operations, guest services, and event planning. Michele is known for his strong commitment to customer satisfaction, financial targets, and staff development, particularly through the creation of wine events and staff training programs.

Michele is based in Milan, Italy, where he continues to lead and inspire in the hospitality industry, always offering his unique perspectives on the evolving world of luxury hotels.

Ranaj  Ramakrishnan

Ranaj Ramakrishnan is a highly skilled and accomplished Chef, currently serving as the Head Chef at Inhabit Restaurant. With a rich career spanning prestigious hotels and resorts, Ranaj has held key culinary positions such as Sous Chef at Café de l'Esplanade, Executive Sous Chef at Fly High Kochi, and Sous Chef at Niraamaya Retreats and The Leela Kovalam, A Raviz Hotel. His earlier experience includes working at Jumeirah at Saadiyat Island Resort, Bulldozer Group Dubai, and Conrad Abu Dhabi Etihad Towers, where he refined his skills and leadership abilities in world-class kitchens.

Ranaj’s culinary journey began after his education at St. Joseph's High School, Mathilakam, and has taken him through a variety of international and Indian establishments. His passion for fine dining and attention to detail have established him as a respected figure in the hospitality industry.

Based in Thrissur, India, and originally from Koolimuttam, Ranaj continues to inspire and lead with his innovative approach to cooking and commitment to excellence in every dish.

Currently serving as the Chief Baker (Chef De Cuisine) at Conrad Abu Dhabi Etihad Towers, Punit brings over 15 years of culinary experience, having worked with renowned establishments like Jumeirah at Etihad Towers and Al-Qasr.

A graduate of Agnel Institute of Food Crafts and Culinary Sciences, Punit began his journey in the culinary world with a passion for creating exceptional baked goods and pastries. His expertise extends beyond just baking; he has successfully managed bakery operations, innovated on menus, and maintained high standards of hygiene and service, ensuring customer satisfaction is always achieved.

Currently working at Bakers Delight in Australia, Saroj brings his extensive knowledge of baking to a new level, having previously honed his skills at Beechworth Bakery in Victoria, Australia.

Before his time in Australia, Saroj worked at Mademoiselle Colette, Inc in California, USA, where he spent a year perfecting his craft. He has also held key positions in renowned hotels and resorts, including Andaz Capital Gate in Abu Dhabi and Five Hotel and Resort in Palm Jumeirah, Dubai, where he served as Chef de Partie (Baker Incharge) and DCDP Baker.

For Saroj, baking is not just a job—it’s a passion. He believes in the purity and authenticity of homemade bread and pastries, showcasing only his own creations on his platforms. Throughout my career, I’ve had the privilege of working in renowned establishments that have shaped my skills and discipline as a chef. I previously worked as a Chef de Partie and Commis Chef at Hyatt Regency Kathmandu, where I refined my techniques and gained invaluable experience in high-end hospitality. I also worked as a Pizza Maker and Cook at Fire And Ice Pizzeria in Kathmandu, where I developed a strong appreciation for authentic flavors and precision cooking. In addition, my time at the Radisson Hotel allowed me to expand my expertise across various culinary roles and further strengthen my foundation in professional kitchen operations.

I am a graduate of Silver Mountain School of Hotel Management, where I studied Culinary Arts and Hospitality Management, along with SMSH:DICA. My education provided me with a strong technical and creative foundation that continues to influence my approach to food.

Now based in Tamworth, New South Wales, I combine my diverse experience with creativity and dedication to deliver high-quality dishes. My goal is always to create memorable dining experiences and continue growing as a chef in the ever-evolving hospitality industry.

Previously, he held the role of Head Chef at Aamanns.dk and Junior Sous Chef at 108cph, where he honed his skills and refined his culinary artistry.
